richberry Raspberry Icebox Cake

Perfect dessert for hot summer days, try this richberry dessert without the use of sugar yet still possess the yummier creamier taste you will enjoy without a guilt.

Ingredients:

  • 24 large rectangular piece or 2 squares or 4 small rectangular pieces graham crackers, crushed

  • ⅓ cup butter

  • 1 (6 ounce) package raspberry flavored Jell-O® mix

  • 1 cup boiling water

  • 15 ounces frozen raspberries

  • 20 regulars large marshmallows

  • ⅓ cup milk

  • 1 cup heavy whipping cream, whipped

Directions:

  • Step 1 Preheat oven to 350 degrees F (175 degrees C).

  • Step 2 Mix graham cracker wafer crumbs, and butter until well combined. Set aside 1/4 cup of this mixture for a topping and press the remainder into one 9x13 inch pan.

  • Step 3 Bake at 350 degrees F (175 degrees C) for 10 minutes. Set aside to cool.

  • Step 4 Dissolve raspberry gelatin in the boiling water and add the frozen raspberries, stirring until melted. Chill until partially set and spread on wafer base.

  • Step 5 Melt marshmallows with the milk. When cool, fold in whipped cream and spread on top of raspberry mixture. Sprinkle with remaining crumbs. Chill for 3-4 hours before serving.

Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
