richberry Raspberry Chocolate Bavarian

This beautiful and mouthwatering cake can be made with raspberries or other seasonal berries or fruits. You can also use peaches or canned pineapple. Combined with miracle berries, you will experience something truly amazingly sweet without adding sugar.

Serves 12


Ingredients:


For the chocolate cake

  • 1 egg

  • 1/4 cup (60g) butter

  • 30 g chocolate

  • 75g sugar (use 4g of sugar instead. Around 5-7% from the recommended quantity)

  • 45g flour

  • Orange

  • 1 dash of rum (optional)

For the Bavarian

  • 500g raspberries(frozen or fresh)

  • Lemon or Calamansi

  • 6 gelatin sheets

  • 40cl liquid cream

  • 200g sugar (use 10g of sugar instead. Around 5-7% from the recommended quantity)

For the topping


Method

  1. To prepare the day before !!!

For the chocolate cake

  1. Preheat the oven to 200 ° C (thermostat 6-7).

  2. Melt the butter with the chocolate, add 4g of sugar, the egg and mix well. Then add the flour gradually and pour the mixture into a pan. Put in the oven for 10 minutes.

  3. After baking, when the cake has cooled down, pierce it with small holes with a fork so that you can soak it with the mixture of orange juice and rum.

For the Bavarian:

  1. Soften the 6 gelatin sheets in a bowl of water. Mix the raspberries with the lemon juice and add the 10 g of sugar. Pour this mixture into a saucepan over low heat, and add the softened and wrung out gelatin sheets. Stir until they melt. Let cool completely.

  2. Assemble the 40 cl of whipped cream (the cream must be very cold). When the raspberry mixture has cooled, add the whipped cream.

  3. Pour everything into the missed pan on the chocolate cake. Put in the refrigerator overnight.

The next day...


For the topping:

  1. Soften the 2 gelatin sheets in water. Heat the coulis in a saucepan, add the drained gelatin leaves and let it cool a little (but not too much, it shouldn't take!). Coat on the Bavarian then put a little in the refrigerator.

For the decor:

  1. Melt the chocolate and have fun with it to make pretty decorations on the cake. I personally prefer to just put the fruits on top of the cake and add some lemon peel to it for a nice presentation.

  2. Unmold and take 2 minutes to admire it.

  3. And here it is finished, serve cold in slices.


Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
