richberry No Bake Lime Mousse Torte

This sour flavoured dessert will turn sweet, not with added-sugar but with richberry. Give it a try and be surprised with the candy-like flavour you didn't see coming.

Ingredients:

  • 2 cups gingersnap cookie crumbs

  • 5 tablespoons melted butter

  • 1 (.25 ounce) envelope unflavored gelatin

  • ⅔ cup lime juice

  • 2 ½ cups heavy cream, divided

  • 3 (8 ounce) packages cream cheese, softened

  • 2 tablespoons grated lime zest

Directions:

  • Step 1 Combine cookie crumbs in a large bowl. Pour in melted butter, and mix thoroughly. Press into the bottom and one inch up the sides of a 10-inch springform pan.

  • Step 2 Sprinkle the gelatin over the lime juice in a small bowl and set aside to soften. Bring 1/2 cup of whipping cream to a simmer in a heavy pan. Remove from heat. Let soften for two minutes, then whisk until smooth. Mix the gelatin into the warmed chocolate until melted; set aside to cool to room temperature. Beat remaining 2 cups of cream to stiff peaks in a large bowl, and set aside.

  • Step 3 Beat the cream cheese with an electric mixer until well blended. Slowly blend the white chocolate mixture into cream cheese, then mix in lime zest. Fold the whipped cream into the cream cheese mixture, and pour into the prepared crust. Cover pan with plastic wrap, and refrigerate overnight.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
