richberry Greek Yoghurt Cheesecake

This fruity dessert with greek yoghurt will make you travel to the fruity goodness haven. Try this with richberry's miracle berry since we remove the use of sugar. Experience the natural sweetness without the use of sugar to curb your calorie intake.

Ingredients:

Crust

  • 2 cups graham cracker crumbs

  • 1/3 cup coconut oil melted

  • 1 1/2 tsp cinnamon


Cheesecake

  • 2 8 oz packages cream cheese

  • 1 cup thick vanilla Greek yogurt

  • 2 Tbsp lemon juice

  • 1 Tbsp vanilla extract

  • 1/8 tsp salt


Strawberry Sauce

  • 1/2 lb strawberries hulled

  • 1/4 p vanilla extract


Instructions:

Crust

  • In a large bowl, stir the graham cracker crumbs, coconut oil and cinnamon until well combined.

  • Spoon the crust evenly between 6 cups and use your fingers or the back of a spoon to pack the crust down firmly into the cups.


Cheesecake

Add all ingredients for the cheesecake to a food processor, and pulse to combine, scraping the edges of the bowl a couple times to incorporate all the ingredients.

  • Spoon the cheesecake evenly between 6 cups.

  • Refrigerate for 2-3 hours until the cheesecake is set.

  • When ready to serve, top the cheesecake with the strawberry sauce, or fresh fruit.


Strawberry Sauce

  • Slice the strawberries in half or in quarter depending on their size and place them in a saucepan with vanilla extract on medium heat.

  • Cook on the stovetop for about 10-15 minutes, stirring frequently until all the sugar is dissolved, the strawberries soften and a syrup forms.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.

Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
