richberry Apple Coffee Cake

Apples and coffee are quite an unusually strange pairing, but for this cake recipe, that’s not the case at all. Since apples and coffee are both acidic foods, it makes this recipe perfect to be paired with richberry.

Yield: Serves 6

INGREDIENTS

· 2 cups (280 g) all-purpose flour

· 2 teaspoons baking powder

· 1 teaspoon salt

· 1 teaspoon ground cinnamon

· 10 Tbsp unsalted butter (140 g), room temperature

· 2 eggs, beaten

· 1 cup (235 ml) whole milk

· 1 medium tart green apple, cored, peeled and sliced into 1/4-inch thick slices

· 1/4 cup (50 g) of white granulated sugar plus 2 Tbsp sugar

Streusel topping:

· 4 Tbsp flour

· 1/4 teaspoon cinnamon

· 1 Tbsp butter, cut into small cubes

· 4 Tbsp brown sugar

METHOD

Preheat oven, prepare pie dish: Preheat the oven to 375°F (190°C). Grease a 9-inch pie pan.

Whisk flour, baking powder, salt: In a medium bowl, whisk vigorously together with the flour, baking powder, and salt.

Beat butter, add eggs, and add flour mixture and milk: Using an electric mixer, beat the. Beat in the eggs until blended. Add the flour mixture in three additions, alternating with the milk, beating after each addition until just combined.

Pour batter into a baking dish, top with apple slices, cinnamon: Pour half of the batter in the bottom of the baking dish. Lay the apple slices on the batter so they just cover the batter (you may have to overlap some slices). Sprinkle the apples with the cinnamon. Spread the rest of the batter over the apples.

Top with streusel topping: In a small bowl mix together the flour and cinnamon for the streusel topping. Sprinkle over the cake and dot with butter.

Bake: Bake the cake at 375°F (190°C) for 30-35 minutes or until it is golden brown and a tester inserted into the centre comes out clean.

Consume Miracle Berry: Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.

Fact: The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.

Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
