richberry Whipped Lime Dessert

Perfect for warm weather to give you a refreshing dessert after a meal. This tarty sour flavoured dessert is perfect with richberry where you can achieve a candy-like taste without having to add sugar.

Ingredients:

  • 1 (3 ounce) package lime flavored Jell-O® mix

  • 1 cup boiling water

  • 2 tablespoons lime juice

  • 1 cup cold evaporated milk

  • 1 (12 ounce) package vanilla wafers, crushed

Directions:

  • Step 1 In a medium bowl, whisk together the gelatin and boiling water until dissolved. Refrigerate until thickened to the consistency of egg whites, about 1 hour.

  • Step 2 When the gelatin is thick, whip the evaporated milk and lime juice in a chilled bowl with chilled beaters until thick enough to form peaks like whipped cream. Fold the whipped milk into the gelatin. Rinse an 8 cup mold and fill with the gelatin mixture. Cover and refrigerate overnight, or at least until set, about 4 hours.

  • Step 3 Unmold the gelatin onto a serving dish and sprinkle with cookie crumbs. Put the rest of the crumbs into a bowl and pass around the table at serving time.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
