Strong, flavorful, citrusy and effervescent, this very potent but delightful drink combines some of my favorite ingredients to use in punch. The cognac, rum, tea and Champagne will have the best pairing with miracle berries by richberry. Using tea in punch has so many benefits, including adding depth of flavor and a caffeinated element and as to the strong citric flavour, richberry will have the magical switch from sour to sweet without even the use of sugar and other sweeteners.
Ingredients:
1 pineapple, peeled, cored and sliced
Juice of 6 lemons
8 oz (237 ml) cognac
2 oz (60 ml) Jamaican rum
1 pint (475 ml) brewed green tea
2 oz (60 ml) peach liqueur
1 (1-L) bottle Champagne
2 qt (2 L) club soda
Lemon wheels, for garnish
Method:
In a punch bowl, combine the sliced pineapple with the lemon juice and cognac. Let stand for up to 1 hour or longer. When ready to serve, add the rum, green tea, peach liqueur, Champagne and club soda. Garnish with lemon wheels. Stir and serve.
Mocktail (non-alcoholic): If you wish to have a delicious non-alcoholic version, please feel free to take the alcohol out and follow the same procedure.
Consume Miracle Berry: Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.
Fact: The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.
