Ingredients:
2 oz (60 ml) aged rum
1 oz (30 ml) fresh pineapple juice
½ oz (15 ml) fresh lime juice
½ oz (15 ml) Ginger Syrup
2 dashes of Angostura bitters
Sparkling water
Orange wedge, for garnish
Candied ginger, for garnish
Cocktail pick, for skewering garnishes
Method:
In a cocktail shaker, combine the rum, pineapple juice, lime juice, ginger syrup and bitters and shake with ice. Strain into a highball glass over ice and top with sparkling water. Garnish with the orange wedge and candied ginger on a cocktail pick.
Mocktail (non-alcoholic): If you wish to have a delicious non-alcoholic version, please feel free to take the alcohol out and follow the same procedure.
