richberry Mocha Dark Chocolate Chips Icebox Cake

Espresso plus dark chocolate... mmmm... that yummy goodness is perfectly tempting with richberry. Enjoy this dessert recipe without the use of sugar yet still naturally sweet.

Ingredients:

  • 1 cup heavy cream

  • 1 (8 ounce) container mascarpone cheese

  • 1 tablespoon instant espresso powder

  • 1 teaspoon vanilla extract

  • 1 (13 ounce) package crispy dark chocolate chip cookies

Directions:

  • Step 1 Combine heavy cream, mascarpone cheese, espresso, and vanilla extract in a large bowl; beat with an electric mixer until firm peaks form.

  • Step 2 Arrange a single layer of dark chocolate chip cookies in an 8-inch cake pan or springform pan, covering the bottom as much as possible. Spread 1/3 of the whipped cream mixture evenly over the cookies. Place another layer of cookies on top, lying flat and touching, followed by 1/2 of the remaining cream. Repeat with the remaining cookies and cream.

  • Step 3 Smooth the top, cover with plastic wrap, and refrigerate until flavors combine, 4 hours to overnight.

Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
