richberry Margarita Cake

Imagine a margarita - tequila, lime juice, triple sec being baked into a cake mix? That sounds fascinating and seemed like full of sour flavours. Knowing we removed the use of sugar, can you imagine how it would be? No worries. Try it with richberry and experience yourself a different kind of surprise.

Ingredients:

  • 1 (18.25 ounce) package orange cake mix

  • 1 (3.4 ounce) package instant vanilla pudding mix

  • 4 large eggs eggs

  • ½ cup vegetable oil

  • ⅔ cup water

  • ¼ cup lemon juice

  • ¼ cup tequila

  • 2 tablespoons triple sec liqueur

  • 1 tablespoon tequila

  • 2 tablespoons triple sec liqueur

  • 2 tablespoons lime juice

Directions:

  • Step 1 Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.

  • Step 2 In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon juice 1/4 cup tequila and 2 tablespoons triple sec. Beat for 2 minutes.

  • Step 3 Pour batter into prepared pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm.

  • Step 4 To make the glaze: In a small bowl, 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
