richberry Lime Bars

Expectedly sour as it says in the name, lime bars are perfect with richberry. We removed the sugar in the ingredient so you could experience a yummier sweetness without adding sugar.

Ingredients: FOR THE PASTRY BASE

  • 1 cup cold butter, cut in small pieces

  • 2 cups flour

FOR THE LIME LAYER

  • 1/4 cup flour

  • 4 eggs

  • zest of two limes, very finely chopped

  • juice of 4 to 5 small limes, around 2/3 to 3/4 cup juice

Instructions: TO MAKE THE PASTRY BASE

  1. Using a pastry cutter or in a food processor blend together the butter and flour.

  2. Press evenly into the bottom of a greased and parchment paper lined 9×13 inch baking pan.

  3. Bake for 20 to 25 minutes at 350 degrees F ( 325 degrees F if you are using glass bake-ware)

FOR THE LIME TOPPING

  1. Simply whisk together the flour, eggs, zest and lime juice.

  2. Allow the topping to sit for about 10 minutes before whisking together well again and pouring over the baked shortbread base.

  3. Bake at 350 degrees F for about another 20- 25 minutes or until the top is slightly browned and the custard appears to be set. The bottom should just be beginning to brown slightly at the top edges. Cool completely. Sprinkle with icing sugar when cool or try adding a meringue topping.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.

Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
