richberry Lemon Meringue Pie

This recipe is not your normal Lemon Meringue Pie. It has no milk and sugar. Try it with richberry and experience how you can have a candy flavoured pie without even adding sugar.

Ingredients:

  • 2 tablespoons all-purpose flour

  • 3 tablespoons cornstarch

  • ¼ teaspoon salt

  • 1 ½ cups water

  • 2 fruit, without seeds lemons, juiced and zested

  • 2 tablespoons butter

  • 4 large egg yolks egg yolks, beaten

  • 1 (9 inch) pie crust, baked

  • 4 large egg whites egg whites

Directions:

  • Step 1 Preheat oven to 350 degrees F (175 degrees C).

  • Step 2 To Make Lemon Filling: In a medium saucepan, whisk together flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.

  • Step 3 To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.

  • Step 4 Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
