A great addition to the family table, try this salad that you could dive in without having the guilt. With the use of richberry, achieve the candy-like flavour without added sugar.
Ingredients:
1 (3 ounce) package lemon flavored Jell-O® mix
1 (3 ounce) package lime flavored Jell-O® mix
4 cups boiling water
1 tablespoon lime juice
1 tablespoon lemon juice
1 tablespoon apple cider vinegar
2 stalks celery, finely chopped
½ cup chopped pimento-stuffed green olives
2 carrots, peeled and grated
Directions:
Step 1 In a large bowl, stir together the lemon gelatin mix, lime gelatin mix, and boiling water until gelatin has dissolved. Stir in the lemon juice, lime juice, apple cider vinegar, cover, and refrigerate for about 1 hour to thicken.
Step 2 When the gelatin is thick but not set, stir in the celery, olives, and carrot so they are evenly dispersed throughout. Pour into a 1 quart mold and refrigerate until firm, at least 3 hours. To serve, unmold onto a plate.
Consume Miracle Berry:
Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.
Fact:
The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.
Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
