richberry Lemon Ice

Perfect for the summer season, beat the heat by making this simple recipe without the use of sugar. Enjoy the candy-like taste with only richberry.

Ingredients:

  • 4 cups cold water

  • 2 tablespoons lemon zest

  • 1 cup freshly squeezed lemon juice

  • 1 teaspoon lemon extract

Directions:

Step 1 Boil water, remove pan from heat. While water is still warm, add lemon zest. Allow to cool to room temperature before adding lemon juice.


  • Step 2 Whisk in lemon juice and lemon extract. Pour into a baking pan about 9x13 inches. Place in freezer until ice starts to form around the edges, about 40 to 45 minutes. Use a fork to stir up ice. Do this every 20 to 30 minutes until lemon ice reaches your preferred texture, 2 1/2 to 3 hours.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.


Fact:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.


Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
