1 1/2 cups water 2/3 cup lime juice (fresh-squeezed; about 3 large limes) The rind of 3 limes (cut into pieces or grated)
In a medium saucepan, bring the water to a boil and add the lime juice and rind and stir well. Allow simmering for at least 2 minutes. Remove from heat, cover, and let rest until the cordial cool completely (about 1 hour). Pour the mix into a well-sealed container and refrigerate overnight Strain out the lime rinds using a fine-mesh strainer. Pour the cordial into a clean bottle with a tight-fitting lid and refrigerate for another day before using it. Use it in your favorite drinks and enjoy!
