Try this recipe without adding sugar or artificial sweeteners and savor the flavorful taste without the guilt. There are only three main ingredients (eggplant, canned tomatoes, and mozzarella cheese) without added flavourings. Just have a bite of richberry's miracle berry and dig in!
Ingredients:
300 grams eggplant (sliced)
150 grams canned tomatoes
40 grams mozzarella cheese (finely sliced)
50 grams onion
2 teaspoons basil
5 grams garlic
½ teaspoon olive oil
¼ teaspoon salt
Water (for boiling the eggplant)
Instructions:
Add some salt to the eggplant. Set it aside to drain properly.
Wash and wipe the eggplant. Then cook it in boiling water for several minutes. Set it aside again to cool and dry.
Blend the tomatoes, onion, basil, garlic, and olive oil together to make a coulis. Cook the mixture in slow heat until it reduces to two-thirds of its original amount.
On a plate, layer the mozzarella slices and tomato coulis over a slice of eggplant.
Continue Step#4 for a number of layers until you use all of the ingredients.
Consume Miracle Berry: Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.
Fact: The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.
