richberry Cucumber Lime Mint Agua Fresca

Agua frescas are refreshing fruit drinks originating from Mexico. They’re cooling and sweet and are great alongside spicy food. Being a mixture of cucumber, lime, and mint – all having high acidity levels – makes it perfect to be paired with richberry.

INGREDIENTS

· 1 lb of cucumbers (about 2 good sized cucumbers), ends trimmed, but peel still on, coarsely chopped

· 1/2 cup lime juice from fresh limes (from about 1 pound of limes, or 5 to 10 limes, depending on how juicy they are)

· 1 1/4 cup packed (spearmint) mint leaves (about a large handful), woody stems removed

· Approximately 1 1/4 cup of water

· 1/2 cup sugar

METHOD

Blend ingredients: Put ingredients in blender, not including the freeze-dried miracle berries; add enough water to fill 3/4 of blender. Hold the lid on the blender and purée until smooth.

Strain out solids: Place a fine mesh sieve over a bowl and pour the purée through it, pressing against the sieve with a rubber spatula or the back of a spoon to extract as much liquid out as possible.


Add ice: Fill a large pitcher halfway with ice cubes. Add the juice. Serve with sprigs of mint and slices of lime.

Consume Miracle Berry: Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during preparation of ingredients). Ensure to remove pits to avoid bitter taste.

Fact: The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.
