Ingredients:
1 oz (30 ml) dark Jamaican rum
½ oz (15 ml) Puerto Rican rum
½ oz (15 ml) Barbados rum
¼ oz (7 ml) falernum
1 oz (30 ml) fresh pineapple juice
½ oz (15 ml) fresh lime juice
½ oz (15 ml) Ginger Syrup
Dash of Angostura bitters
2 dashes of absinthe
Sparkling water
Fresh pineapple chunks, for garnish
Candied ginger, for garnish
Cocktail pick, for skewering garnishes
Mint sprig, for garnish (optional)
Method:
In a cocktail shaker, combine the rums, falernum, pineapple juice, lime juice, ginger syrup, bitters and absinthe and shake with ice. Strain into a highball glass or tiki mug over ice and top with sparkling water. Garnish with the pineapple chunks and candied ginger on a cocktail pick and add the mint sprig, if desired.
Mocktail (non-alcoholic): If you wish to have a delicious non-alcoholic version, please feel free to take the alcohol out and follow the same procedure.
Consume Miracle Berry: Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.
Fact: The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.
