richberry Avocado Ice Cream

Writer: Maharlika LobatonMaharlika Lobaton

Perfect for vegan and those who are weight conscious people because we removed the use of maple syrup and replaced it with richberry instead. Just chew your miracle berry from richberry while preparing until your tongue is coated. Experience a surprising sweet taste without even adding sweeteners.

Ingredients:

  • 1 14- ounce can full-fat coconut milk refrigerated overnight

  • 2 ripe avocados halved, pitted and peeled

  • 1 ripe banana cut, and frozen

  • 2 tablespoon lemon juice

  • 4-5 large mint leaves

Instructions:

  • Chill a loaf pan in the refrigerator for at least 30 minutes or up to 24 hours.

  • In a high-speed blender, add the peeled and pitted avocados. Scoop out the solid part of the coconut milk into a blender and save the liquid part to use in another recipe (like a smoothie). Add the banana, lemon juice and mint leaves. Blend until smooth and creamy.

  • Pour the mixture into the chilled loaf pan and use the back of a spoon to distribute evenly. Place in the freezer for at least 4 hours or overnight.

  • For best results, let soften for 10-15 minutes at room temperature before serving.

Consume Miracle Berry:

Just before digging in, chew 1 or more freeze-dried miracle berry (this can also be done during the preparation of ingredients). Ensure to remove pits to avoid a bitter taste.

Facts:

The active ingredient miraculin from miracle berry will turn sour foods such as lemon, lime, orange, grapefruit, non-fat yoghurt and other citrus food to taste sweet without adding sugar. We recommend two halves or 2 servings for maximum effectiveness. Make sure to follow instructions from the back of the packaging.

Note: Sometimes you may need to add at least 5-7% of the total quantity of sugar required, this is due to the chemistry of the food, however, you may skip this as you wish. The goal is to totally reduce sugar and yet experience the same taste.
