1 fluid ounce light rum
½ fluid ounce lime juice
1/2 fluid ounce lemon concentrate
1 cup ice
1 tablespoon chilled Champagne
Combine rum, lemon and lime juice in a cocktail shaker. Add ice, cover, and shake until chilled. Strain into Champagne flute. Top with Champagne.
If you wish to have a delicious non-alcoholic version, please feel free to take the alcohol out and follow the same procedure.
